Meal Plan #8
A week of delicious & straightforward meals.
I have nothing poetic to say about this week’s meal plan other than every dish is phenomenally delicious and really straightforward.
There’s a little bit of everything in it:
a brand new 5-ingredient salmon recipe that’s seriously TDF
30-Minute Gnocchi Bolognese that tastes like it’s been simmering for hours
a dreamy and Creamy Mushroom Chicken recipe perfect for a bleak January evening
a flavor-packed pantry friendly shakshuka, that quite honestly you probably have almost all the ingredients for already
one of my favorite make-ahead meals (aka the Chicken Salad Wrap) that you can cook once and eat all week long for lunch or dinner
Reese’s Pieces Cookies—need I say more?
Tips for this week‘s recipes:
Make the chicken salad wrap ahead of time if you need an easy dinner or lunch on repeat. Zero shame for using a rotisserie chicken to keep things even less complicated.
Double the gnocchi bolognese sauce and save the other half in the freezer for a busy night!
If you have a really great bakery nearby, grab their best crusty loaf to enjoy with your shakshuka.
Your orange and olive oil salmon will only be as good as your fish is. I like to get mine at Costco, Trader Joe’s, or if you have a fresh fish market nearby that’s always best.
Huge thank you to my team who is keeping this newsletter afloat for the first month or so after baby #4 arrives. I had a lot of fun developing these recipes ahead of time and hope that you’ll enjoy them too. :)
