I am BEYOND ready for the weekend to be here.
This week was nonstop, and tomorrow, I have big plans to (hopefully) sleep in a little, bake a cake for a friend’s birthday, and work on a puzzle.
One task I’ve been working on is trying to work ahead for March and April, my two busiest months of the year, and get an arsenal of recipes in order.
Here are some of the “pending” recipes I’m working on:
focaccia pizza (coming Monday!)
melt in your mouth beef stroganoff (inspired by a restaurant in my hometown of SLC called the Copper Onion)
Marie Kondo breafast sando anyone?

10 Things That Made This Week Great
My daughter walking around with this oven mitt tells me she’s totally bound for greatness (at least in the kitchen!).
Getting my car detailed! This is my new “every 3-4 months” thing and worth every penny.
Made these *incredible* dark chocolate brownies. No double boiler required, zero fussy ingredients, and just last week totally updated the recipe and omitted a step that called for whipping the egg whites because, quite frankly, I think they taste better without.

Exploring syrups galore at the US Foods Chef’Store like a kid in a candy shop. What are your fav syrups to put in a Swig-style soda? (I’m a coconut girl forever and ever.)
My kids watching our brief 60 minutes of snowfall like it was a movie. They would die if they saw the mountains of snow we played in when I was a kid.
Eating leftover pulled pork sandos (thanks to this recipe) like it’s my job. Pro tip: the best way to reheat pulled pork is covered in foil in the oven. IF you have some time, do it at 225°F for an hour. In a rush? Bump the temp up to 400°F and heat until warmed through (about 10-20 mins).
Where does my husband find vids like this?
I’ve been looking for the perfect pair of white sneakers (sneakers? tennis shoes? what are we calling them these days?), and I think I found them! TY to the lady who talked me into them at Nordstrom. So far, they’re super comfortable, and I love that I can dress them up or down.
Nothing that a giant bowl of homemade Rice Krispies Treats can’t fix, and this is my favorite recipe for classic RKTs.
