Never has a Christmas lyric rung more true to me than this year.
I hate to sound like a scorned mother, but this 36-week pregnant mom of almost 4 is ready for more routine, a little less screen time, and substantially less takeout.
Since starting our meal plans last month, I have *loved* cooking along every week.
Confession: sometimes when I develop a brand new recipe, I’m a little tired of eating the same thing by the end. I mean, my family and I can only eat carbonara for so many nights in a row until someone revolts (myself included). I’ve loved revisiting old favorites and piecing together recipes for every week based on what sounds good, which ingredients are in season, and recipes that makes sense together.
This week was my third week in a row of intentionally simple and easy recipes (with a sprinkle of post-holiday health, ahem).
The Weeknight Minestrone is the most comforting way to get your veggies in, the Teriyaki Salmon Bowl is one of my favorite recipes I’ve *ever* developed, the Slow Roasted Chicken is one of our most popular recipes of all time, the Air Fryer Breakfast Sandwiches are the perfect easy lunch or dinner, and the Good Luck Souvla Salad basically secured me a visa to Italy (read the full story here) so maybe it will bring you good luck, too.
