I have Super Bowl and Valentine’s Day recipes headed your way over the next two weeks, but until then, it is still January, and per your request, we’re doing an easy, incredibly delicious, 30-minute meal for our weekly recipe.
Cue: honey chipotle salmon tacos.
These. Are. So. Good.
This easy, 30-minute sheet pan dinner is the perfect combo of sweet with a touch of heat. Tender, flaky salmon is brushed with a simple glaze and broiled to perfection. You’ll serve it on a warm tortilla and top with a bright, cilantro lime slaw you could make in your sleep.
A Few Tips!
Your tacos will only taste as good as your salmon. Try to buy a good quality salmon (fresh is best!). I like to get mine at Costco, but this would totally be a good occasion to splurge at a Whole Foods or comparable grocery store.
Don’t be afraid to mix it up! Want more toppings? Add thinly sliced jalapeños, avocado chunks, or hot sauce. Want a different protein? Use the same glaze for chicken thighs and broil until they reach 165°F. Don’t love flour tortillas? Swap for corn for an end result that’s just as delicious.
Leftovers! Do you have them? Pair any extras on top of a bowl of white rice (don’t forget the slaw!) or a big green salad.
How To Make This For A Crowd
If you are cooking for a crowd, double or triple the recipe, and try serving this meal as a DIY taco bar. Instead of cooking the salmon as individual bites, glaze the entire filet of salmon, cook at 375°F for 20-25 minutes, and flake the salmon into large pieces.
Set up a large platter of the flaked salmon with the cilantro lime slaw on the side. Arrange your warm tortillas and give your guest the choice between flour and white corn. Make a topping bar with bowls of sliced radishes, lime wedges, chopped cilantro, sliced jalapeños, sour cream, hot sauce, and crumbled cotija cheese.
